Peach Parfait Pie

This pie is refreshing and very easy to make.  It is enhanced by the unusual crust. 

 Crust

1 cup quick cooking oatmeal, uncooked

½ cup slivered almonds

½ cup brown sugar

1/3 cup melted butter or margarine (measured after melting)

 Filling

1 pkg orange gelatin

1 pint vanilla ice cream, softened

2 cups sliced fresh peaches, drained

1 cup boiling water 

Spread oats in shallow pan and toast for 5 minutes in oven preheated to 350°.  Add almonds and mix well.  Add brown sugar and butter.  Mix.  Press into bottom and sides of buttered 9-inch pie pan.  Reserve some of the mixture for garnish.  Refrigerate crust until chilled. 

Dissolve gelatin in water.  Quickly add ice cream by spoonfuls, stirring constantly until ice cream melts.  Fold in peaches.  Spoon peach mixture into crust.  Refrigerate pie until almost firm.  Sprinkle reserved oat mixture around edge of pie.  Chill until firm.
